Turkey in a creamy tomato-mascarpone sauce

- 4 turkey fillets
- 1 onion, finely chopped
- 2 cloves of garlic, finely chopped
- 400 g diced tomatoes (from a can)

- 1 tablespoon of olive oil
- Salt and pepper to taste

Instructions
- Heat the olive oil in a large frying pan over medium-high heat.

Instructions
- Preheat the oven to 180°C. In a bowl, mix the goat cheese, cranberries, honey and walnuts into a creamy filling.
- Place the flattened turkey fillets on a cutting board and spread the stuffing evenly over the fillets.
- Roll up the fillets tightly and secure with a cocktail stick.
- Heat the olive oil in an oven-proof pan and fry the turkey rolls all around until golden brown.

Ingredients
- 500 g turkey fillet, diced
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice

- 1 teaspoon cumin powder
- Salt and pepper to taste
- 200 g Greek yoghurt
- 1 tablespoon harissa (or other spicy sauce)

- Mix the olive oil, lemon juice, garlic, paprika, cumin, salt and pepper in a large bowl. Add the turkey cubes and marinate for at least 30 minutes (or up to overnight) in the fridge.
- Thread the marinated turkey cubes onto skewers and grill them on a hot barbecue or in a grill pan, about 10-12 minutes, until cooked and golden brown.
- Mix the Greek yoghurt with the harissa for the spicy yoghurt sauce. Season with salt and pepper.Serve the turkey kebabs with the spicy yoghurt sauce and garnish with fresh mint. Delicious with flatbread and a fresh salad.
Turkey Tikka Masala
Ingredients
- 500 g turkey fillet, diced
- 150 ml Greek yoghurt
- 2 cloves of garlic, finely chopped
- 1 tablespoon grated ginger
- 1 teaspoon garam masala
- 1 teaspoon curcuma
- 1 teaspoon paprika powder
- 1 can (400 ml) of diced tomatoes
- 200 ml coconut milk
- 1 onion, finely chopped
- 2 tablespoons of olive oil
- Fresh coriander for garnish

- In a bowl, mix the Greek yoghurt with garlic, ginger, garam masala, turmeric and paprika. Add the turkey cubes and leave to marinate in the fridge for at least 2 hours.
- Heat the olive oil in a large pan and fry the onion until soft.
- Add the marinated turkey cubes and fry until golden brown.
- Add the diced tomatoes and coconut milk, bring to the boil and simmer for 20 minutes.
- Garnish with fresh coriander and serve with basmati rice and naan bread.
Turkey Piccata with lemon and capers
Ingredients
- 4 turkey fillets, thinly sliced
- 3 tablespoons of flour
- 3 tablespoons of butter
- 2 tablespoons of olive oil
- Juice of 1 lemon
- 100 ml chicken broth
- 2 tablespoons capers, rinsed and drained
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the turkey fillets with salt and pepper and dust lightly with flour, shaking off any excess.
- Heat 2 tablespoons of butter and the olive oil in a large frying pan over medium-high heat.
- Fry the turkey fillets until golden brown on both sides, about 3 minutes per side. Remove them from the pan and set aside.
- Add the lemon juice, chicken stock and capers to the pan. Bring to the boil, scraping the bottom of the pan to soak up all the flavour.
- Simmer for 5 minutes until the sauce has thickened slightly. Add the last tablespoon of butter to make the sauce creamy.
- Put the turkey fillets back in the pan and simmer for another 2 minutes, so they absorb the sauce well.
- Garnish with fresh parsley and serve with pasta or mashed potatoes and a fresh green salad.
