Mother’s Day is upon us again and what could be better than spoiling your mother with special recipes? This year, skip the traditional breakfast in bed and go for a surprising and original menu to really show her how much she means to us. So, why not get into the kitchen and prepare some unforgettable dishes? Here are some delicious and original recipes to spoil your mother on her special day.

Savoury pancake rolls with spinach and feta cheese


Ingredients
  • 1 cup flour
  • 1 egg
  • 1 cup of milk
  • 1 handful of fresh spinach
  • 100 g crumbled feta cheese
  • Salt and pepper to taste
  • Olive oil

Instructions
  1. Mix the flour, egg and milk into a smooth batter.
  2. Add the chopped spinach and crumbled feta to the batter and season with salt and pepper.
  3. Heat some olive oil in a pan over medium-high heat and pour a thin layer of batter into the pan.
  4. Fry the pancake until golden brown on both sides and repeat with the remaining batter.
  5. Roll up the pancakes and slice them. Serve them as appetisers for a delectable start to the day.

Roasted vegetable quiche with goat cheese


Ingredients
  • 1 roll of ready-made pastry dough
  • 2 red onions, thinly sliced
  • 1 courgette, thinly sliced
  • 1 red pepper, cut into strips
  • 100 g cherry tomatoes, halved
  • 150 g goat’s cheese, crumbled
  • 4 eggs
  • 200 ml of cream
  • Salt and pepper to taste
  • Fresh herbs of your choice (e.g. thyme, basil)

Instructions
  1. Preheat the oven to 180°C.
  2. Line a quiche mould with the savoury pie dough and poke holes in it with a fork.
  3. Spread the slices of onion, courgette, pepper and cherry tomatoes evenly over the dough.
  4. Sprinkle the crumbled goat cheese over the vegetables.
  5. Beat the eggs with the cream, salt, pepper and fresh herbs and pour this mixture over the vegetables.
  6. Bake the quiche in the preheated oven for 30-35 minutes, or until the filling is firm and the top is golden brown.
  7. Let the quiche cool slightly before serving.

Creamy strawberry mousse with fresh mint


Ingredients
  • 250 g fresh strawberries, halved
  • 200 ml whipped cream
  • 50 g icing sugar
  • Fresh mint leaves for decoration

Instructions
  1. Mash the strawberries in a blender or food processor until smooth.
  2. Whip the cream until stiff with the icing sugar.
  3. Carefully stir the mashed strawberries into the whipped cream until everything is well blended.
  4. Divide the mousse between glasses or bowls and leave to set in the fridge for at least an hour.
  5. Garnish the mousse with fresh mint leaves for a refreshing finishing touch.
