Ingredients
Meat
- 500 g chicken breast or lamb, cut into thin strips
- 1 tablespoon of olive oil
- 2 cloves of garlic, finely chopped
- 1 teaspoon paprika powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
Filling
- 4-6 large wraps (homemade or bought)
- Iceberg lettuce, finely chopped
- Tomato, sliced
- Cucumber, sliced
- Red onion, thinly sliced
- Pickled chillies (optional)
- Fresh parsley
Garlic sauce
- 200 ml Greek yoghurt
- 2 cloves of garlic, finely chopped
- 1 tablespoon of lemon juice
- Salt and pepper to taste

Marinating and frying meat
- In a bowl, mix the meat with olive oil, garlic, paprika, cumin, coriander, salt and pepper. Let this marinate for at least 30 minutes.
- Heat a frying pan over medium-high heat and fry the marinated meat until cooked and golden brown.
Preparing garlic sauce
- Mix the Greek yoghurt with garlic, lemon juice, salt and pepper. Leave the sauce in the fridge for a while.
Putting together the durum
- Place a wrap on a plate and spread some garlic sauce on it.
- Add some of the fried meat, followed by lettuce, tomato, cucumber, red onion and pickled peppers.
- Sprinkle with fresh parsley and roll up the wrap tightly.
- Serve immediately and enjoy your homemade durum!

- 1 small onion, finely chopped
- 2 cloves of garlic, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika powder
- Salt and pepper to taste
- 2 tablespoons chopped parsley
Filling
- 4 pita bread rolls (homemade or bought)
- Iceberg lettuce, finely chopped
- Tomato, sliced
- Cucumber, sliced
- Red onion, thinly sliced
- Feta or grated cheese (optional)
Garlic sauce
- 200 ml Greek yoghurt
- 1 tablespoon of olive oil
- 1 clove of garlic, finely chopped
- 1 teaspoon lemon juice
- Mint leaves, finely chopped (optional)
- Salt and pepper to taste
Preparation
Preparing kebab meat
- In a bowl, mix the meat with olive oil, garlic, paprika, cumin, coriander, salt and pepper. Let this marinate for at least 30 minutes.
- Heat a frying pan over medium-high heat and fry the marinated meat until cooked and golden brown.
Preparing yoghurt sauce
- Mix the Greek yoghurt with olive oil, garlic, lemon juice, salt, pepper and mint leaves, if desired.
Composing pita
- Cut open the pita buns and fill them with a layer of yoghurt sauce.
- Add some kebabs, followed by lettuce, tomato, cucumber and red onion.
- Sprinkle with feta or grated cheese, if desired.
- Serve hot and enjoy your delicious pita kebab!

Preparation
Marinating grilling kebab meat
- In a bowl, mix the meat with olive oil, paprika, cumin, coriander, garlic, salt and pepper. Let the meat marinate for at least 30 minutes.
- Thread the meat cubes onto skewers and grill until cooked and nicely browned, about 5-7 minutes per side.
Putting together a kebab platter
- Serve the grilled meat on a bed of rice or with fries.
- Add fresh vegetables such as lettuce, tomato, cucumber and red onion.
- Garnish with pickled chillies and pour the tahini or garlic sauce over the top.
Optional
- Serve the dish with extra sauce on the side and a piece of warm flatbread.
