Making your own chocolate mousse

Ingredients


  • 200 gram pure chocolade
  • 4 eggs, split
  • 50 grams of sugar
  • A pinch of salt
  • 250 ml whipped cream

Step 1: melt the chocolate


Start by melting the dark chocolate. You can do this au bain-marie or in the microwave, but make sure you melt the chocolate gently and don’t let it burn. Then let it cool slightly.

Step 2: beat the egg yolks and sugar


In a separate bowl, beat the egg yolks with the sugar until fluffy and pale. If necessary, add a pinch of salt for a balanced flavour.

Step 3: add melted chocolate


Carefully pour the melted chocolate into the egg mixture and mix well. Add vanilla extract if necessary for extra flavour.

Step 4: whip the egg whites


Beat the egg whites until stiff in a clean, dry bowl. This will add lightness to the chocolate mousse. Carefully pour the chocolate mixture over the stiffly beaten egg whites and gently fold together.

Step 5: whip the cream


In another bowl, beat the whipping cream to soft peaks. Add the whipped cream to the chocolate egg mixture and gently fold in this too.

Step 6: leave to set


Pour the chocolate mousse into individual glasses or bowls and let it set in the fridge for at least 3-4 hours. This will give the mousse the perfect texture.

Serving tips


  • Garnish with grated chocolate, chopped nuts or fresh strawberries for an extra touch.
  • Serve with a dollop of whipped cream or a mint leaf for a visual and flavourful finishing touch.
