Ingredients

Step 1: melt the chocolate

Step 2: beat the egg yolks and sugar
In a separate bowl, beat the egg yolks with the sugar until fluffy and pale. If necessary, add a pinch of salt for a balanced flavour.
Step 3: add melted chocolate
Carefully pour the melted chocolate into the egg mixture and mix well. Add vanilla extract if necessary for extra flavour.
Step 4: whip the egg whites
Beat the egg whites until stiff in a clean, dry bowl. This will add lightness to the chocolate mousse. Carefully pour the chocolate mixture over the stiffly beaten egg whites and gently fold together.
