Easy recipe for delicious pumpkin soup

As autumn sets in and the days grow shorter, there is nothing more comforting than a bowl of steaming, creamy pumpkin soup. Ingredients

  • 1 medium pumpkin, peeled and diced
  • 1 large onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste

Instructions

  1. Heat a dash of olive oil in a large soup pan over medium-high heat. Add the onion and fry until translucent, then add the garlic and fry for another minute.
  2. Add the diced pumpkin to the pan and fry for a few minutes, stirring occasionally.
  3. Pour the vegetable stock into the pan so that the squash is just submerged. Bring to the boil, then simmer on low heat until the squash is soft, about 20-25 minutes.
  4. Once the pumpkin is cooked, puree the soup with a hand blender or in portions in a blender to a smooth consistency.
  5. Add the ground cumin, cinnamon and nutmeg to the soup and stir well. Season with salt and pepper.
  6. Let the soup simmer on low heat for a few more minutes to allow the flavours to blend well.
  7. Serve the pumpkin soup hot and garnish with your favourite toppings.
Optional toppings:

  • Roasted pumpkin seeds: Fry the pumpkin seeds in a dry frying pan until light brown and crunchy. Then sprinkle them over the soup for a crunchy texture.
  • Fresh herbs: Chop some fresh parsley, chives or coriander and sprinkle over the soup for a refreshing flavour.
  • A dash of cream: Add a dash of cream or coconut milk to the soup for extra creaminess and a silky smooth texture.
  • Fried bacon: Fry some bacon crispy and crumble it over the soup for a savoury flavour and crispy bite.
