- Black beans – 4 cans (400 g each), drained and rinsed

- Corn kernels – 2 cans (300 g each), drained
- Paprika – 4 pieces, diced
- Onion – 2 large, finely chopped

- Add the diced tomatoes, beans, corn and vegetable stock. Stir well and bring the mixture to a boil.
- Turn down the heat and simmer the chilli gently for 20-25 minutes, allowing the flavours to mix well. Stir occasionally.
- Season with salt and pepper. Let the chilli thicken slightly.
- Serve the chilli with fresh coriander and possibly a blob of sour cream and some grated cheese.
