  • 1 kg potatoes, cut into wedges
  • 3 tablespoons olive oil

Instructions
  1. Preheat the oven to 200°C. Mix the potato wedges with olive oil, rosemary, garlic, salt and pepper in a bowl.
  2. Spread the potatoes on a baking tray lined with baking paper and roast for 35-40 minutes, or until golden brown and crispy. Flip halfway through.
  3. Serve as a side dish with meat, fish or a vegetarian meal.

Roasted chicken drumsticks with rosemary and lemon


Chicken drumsticks become deliciously tender and juicy when roasted with rosemary and lemon. This simple dish is perfect for a weeknight meal or dinner party.

Ingredients
  • 4 chicken drumsticks
  • 2 tbsp olive oil
  • 2 sprigs of rosemary, finely chopped
  • 2 cloves of garlic, finely chopped
  • Juice of 1 lemon
  • 1 lemon, sliced
  • Salt and pepper to taste
Instructions
  1. Preheat the oven to 180°C.
  2. Mix olive oil, chopped rosemary, garlic, lemon juice, salt and pepper. Rub the chicken legs well with this mixture.
  3. Place the chicken legs in a baking dish and place the lemon slices around them.
  4. Roast the chicken for 40-45 minutes, until golden brown and cooked through.
  5. Serve with roasted vegetables or a fresh salad.

Focaccia with rosemary and sea salt


This delicious focaccia is crispy on the outside and soft on the inside, with the full flavour of rosemary and sea salt. Perfect to serve with a soup or as part of an antipasti board.

Ingredients
  • 500 g flour
  • 1 sachet of dried yeast (7 g)
  • 300 ml lukewarm water
  • 3 tbsp olive oil + extra for sprinkling
  • 2 sprigs fresh rosemary, needles finely chopped
  • 1 tsp sea salt flakes
Instructions
  1. Mix the flour, yeast and a pinch of salt in a bowl. Add the lukewarm water and 3 tbsp olive oil and knead into a supple dough. Leave to rise for 1 hour in a warm place.
  2. Preheat the oven to 220°C.Press out the dough on a baking tray and press deep dimples into it with your fingers. Drizzle with olive oil, sprinkle with the chopped rosemary and sea salt.
  3. Bake the focaccia for 20-25 minutes, until golden brown and crispy.
  4. Leave to cool slightly before serving.

Caramelised pears with rosemary and honey


Rosemary works surprisingly well in sweet dishes, like in these caramelised pears with honey and rosemary. This dessert is simple but impressive and delicious with a scoop of vanilla ice cream.

Ingredients
  • 4 ripe pears, halved and stoned
  • 2 tbsp honey
  • 2 sprigs of rosemary
  • 25 g butter
  • 1 tbsp sugar
Instructions
  1. Melt the butter in a frying pan over medium-high heat.
  2. Add the pears, cut side down, and cook for 5-7 minutes until they start to turn golden brown and soft.
  3. Sprinkle with sugar and add the honey and rosemary. Cook for another 2-3 minutes until the pears start to caramelise.
  4. Serve the pears warm, possibly with vanilla ice cream or a blob of whipped cream.
