Making bruschettas: from classic to creative

Bruschettas are a delicious Italian appetiser that is loved worldwide for its simplicity and versatility ánd that you can just easily make yourself. It all starts with a slice of toasted bread, rubbed with garlic and drizzled with olive oil. But the creativity doesn’t stop there! Classic bruschetta


The classic bruschetta, known as bruschetta al pomodoro, is a tasty combination of tomatoes, basil, and garlic. Read how to make these delicious classic bruschettas yourself quickly and easily here.

Ingredients
  • 4 ripe tomatoes
  • 2 cloves of garlic
  • 1 bunch of fresh basil
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 1 baguette our ciabatta

Instructions
  • Cut the tomatoes into small cubes and put them in a bowl. Finely chop the basil leaves and add them to the tomatoes. Peel and finely chop a clove of garlic and add it to the tomato mixture. Drizzle the mixture with a generous amount of extra virgin olive oil and season with salt and pepper. Mix well and leave for a while to allow the flavours to mingle.
  • Cut the baguette or ciabatta into slices about 1 cm thick. Lightly toast the slices on both sides on a grill pan or in the oven
  • Peel the second clove of garlic and rub the warm toasted bread slices with it for extra flavour.
  • Spoon the tomato mixture over the toasted bread slices.

Bruschetta with goat cheese and honey


Ingredients
  • 2 ripe avocados
  • 1 lime (juice)
  • 1 small red onion, finely chopped
  • Chili flakes to taste
  • Salt and pepper
  • Fresh bread of your choice

Instructions
  • Mash the avocados in a bowl and mix with lime juice, chopped red onion, chilli flakes, salt and pepper.
  • Toast the bread as in the classic recipe.
  • Spread the avocado mixture on the toasted slices and serve immediately.

Bruschetta with roasted peppers and feta cheese


Ingredients
  • 2 red peppers
  • 100g feta cheese, crumbled
  • 1 clove of garlic, finely chopped
  • Fresh parsley, chopped
  • Extra virgin olive oil
  • Fresh bread of your choice

Instructions
  • Roast the peppers in the oven until blackened. Put them in a bowl and cover with plastic wrap to steam. Then remove the skin and seeds and cut into strips.
  • Mix the roasted peppers with chopped garlic and chopped parsley.
  • Toast the bread as in the classic recipe.
  • Top the slices with the pepper mixture and crumble the feta over the top. Drizzle with olive oil and serve.

Bruschetta with mushrooms and thyme


Ingredients
  • 250g mixed mushrooms, sliced
  • 2 cloves of garlic, finely chopped
  • Fresh thyme
  • Butter and olive oil
  • Salt and pepper
  • Fresh bread of your choice

Instructions
  • Heat butter and olive oil in a pan and add the chopped garlic. Fry briefly until it starts to smell.
  • Add the mushrooms and thyme and fry until the mushrooms are golden brown. Season with salt and pepper.
  • Toast the bread as in the classic recipe.
  • Top the slices with the fried mushrooms and serve immediately.

Bruschetta with burrata, figs and balsamic glaze


Ingredients
  • 1 ball of burrata
  • 4 fresh figs, sliced
  • 2 tablespoons balsamic glaze
  • Handful of rocket
  • Extra virgin olive oil
  • Fresh bread of your choice

Instructions
  • Cut the bread into slices and toast them as described in the classic recipe.
  • Carefully cut the burrata in half to release the creamy inside. Place a few leaves of rocket on each slice of toasted bread. Place a scoop of burrata on top and top with a few slices of fresh fig.
  • Drizzle some balsamic glaze over the burrata and figs, and drizzle with a little extra virgin olive oil.

Bruschetta with smoked salmon and lemon cream cheese


Ingredients
  • 150g smoked salmon, thinly sliced
  • 100g cream cheese
  • 1 tablespoon of lemon juice
  • Grated zest of 1 lemon
  • 1 tablespoon fresh dill, finely chopped
  • Fresh bread of your choice

Instructions
  • Cut the bread into slices and toast them as in the classic recipe.
  • Mix the cream cheese with the lemon juice, grated lemon zest and chopped dill until smooth.
  • Spread a generous layer of lemon cream cheese on the toasted bread slices. Place a slice of smoked salmon on top of the cream cheese.
  • Garnish if necessary with a little extra dill and a few drops of olive oil or extra lemon juice for a fresh finish.
