Ingredients
- 4 cod fillets
- 2 tbsp olive oil
- 2 tbsp butter
- 2 cloves of garlic, finely chopped
- Juice of 1 lemon
- 1 tbsp fresh parsley, finely chopped
- Salt and pepper to taste
Instructions
- Heat the olive oil in a frying pan over medium-high heat.
- Season the cod fillets with salt and pepper. Fry for 3-4 minutes on each side until golden brown and just cooked through.
- Add the butter and garlic to the pan and fry briefly until the garlic starts to smell.
- Add the lemon juice and fresh parsley to the butter and pour the sauce over the fried cod fillets.
- Serve with fresh vegetables or a salad.


Cod in tomato sauce with olives and capers

- 4 cod fillets
- 1 can of diced tomatoes (400 g)
- 1 onion, finely chopped
- 2 cloves of garlic, finely chopped
- 50 g black olives, halved
- 2 tbsp capers
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil, chopped (for garnish)
- 4 cod fillets
- 1 can of diced tomatoes (400 g)
- 1 onion, finely chopped

- 50 g black olives, halved
- 2 tbsp capers
- 2 tbsp olive oil
- 1 tsp dried oregano

Instructions
- Heat the olive oil in a large frying pan and fry the onion and garlic until soft.
- Add the diced tomatoes, oregano, olives and capers and bring the sauce to the boil. Simmer for 10 minutes.
- Place the cod fillets in the tomato sauce, cover and cook gently for another 10-12 minutes until the fish is cooked.
- Season with salt and pepper and garnish with fresh basil.
- Serve with rice, pasta or fresh bread.
Cod fillet with almond crust

- 4 cod fillets
- 100 g almonds, finely chopped

Instructions
- Preheat the oven to 200°C and line a baking sheet with baking paper.
- In a bowl, mix the chopped almonds, breadcrumbs, parsley and a pinch of salt and pepper.
- Dip the cod fillets first in the beaten egg and then press them into the almond mixture, covering them completely.
- Place the fillets on the baking tray, drizzle with olive oil and bake in the oven for 12-15 minutes, until golden brown and cooked through.
- Drizzle the fish with lemon juice and serve with a fresh salad or roasted vegetables.
