Ingredients
  • 500 g sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, finely chopped
  • 1 piece of fresh ginger (2 cm), grated
  • 400 ml coconut milk
  • 500 ml vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh coriander (optional)
Instructions
  • Heat the olive oil in a soup pan and fry the onion, garlic and ginger until the onion is glazy.
  • Add the diced sweet potato and fry for 5 minutes.
  • Pour in the vegetable stock and coconut milk and bring to the boil. Simmer the soup for 15-20 minutes until the potatoes are soft.
  • Puree the soup with a hand blender until smooth. Season with salt and pepper.
  • Serve with fresh coriander as garnish.

  • 3 medium sweet potatoes, peeled and cut into chips
  • 2 tbsp olive oil
  • 1 tsp paprika powder

Instructions
  • Preheat the oven to 200°C.Mix the sweet potato fries with olive oil, paprika, garlic powder, salt and pepper.
  • Spread the chips on a baking tray lined with baking paper, making sure they do not overlap.
  • Bake the chips in the oven for 25-30 minutes, flipping them halfway through. They should be golden brown and crispy.
  • Serve as a side dish or snack with a tasty dip, such as aioli or hummus.

Stuffed sweet potato with minced meat


This delicious dish combines the sweet taste of roasted sweet potato with spicy minced meat, black beans, and creamy avocado.

Ingredients
  • 4 sweet potatoes
  • 300 g minced beef
  • 1 can (400 g) black beans
  • 1 avocado, diced
  • 1 onion, chopped
  • 2 cloves of garlic, finely chopped
  • 1 tsp cumin,
  • 1 tsp paprika,
  • 1 tsp chilli powder
  • Juice of 1 lime
  • Fresh coriander (optional)
  • Olive oil, salt, pepper
  • Grated cheese or Greek yoghurt (optional)
Instructions
  • Preheat the oven to 200°C. Prick the sweet potatoes and roast for 45-60 min.
  • Fry onion and garlic in olive oil. Add minced meat and spices, and brown. Add beans and heat through.
  • Cut open the potatoes and fill them with the mince mixture.
  • Top with avocado, lime juice, coriander and any cheese or yoghurt.

Sweet potato and quinoa salad


A light, nutritious salad that is perfect for lunch or as a side dish.

Ingredients
  • 2 large sweet potatoes, peeled and diced
  • 150 g quinoa
  • 1 tin of chickpeas, drained and rinsed
  • 1 handful of spinach
  • 50 g feta cheese, crumbled
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp honey
  • 1 tsp mustard
  • Salt and pepper to taste
Instructions
  • Preheat the oven to 200°C and roast the sweet potato cubes for about 25 minutes until tender.
  • Meanwhile, cook the quinoa according to the instructions on the packet.
  • In a large bowl, mix the roasted sweet potato, cooked quinoa, chickpeas and spinach.
  • Make a dressing from olive oil, lemon juice, honey, mustard, salt and pepper. Pour this over the salad and mix well.
  • Garnish with feta and serve at room temperature.

Ingredients
  • 1 large sweet potato, cooked until tender and mashed
  • 100 g almond flour
  • 50 g cacao
  • 2 eggs
  • 3 tbsp honey or maple syrup

  • 1 tsp baking powder
  • Pinch of salt
  • Optional: 50 g dark chocolate, chopped into pieces
Instructions
  • Preheat the oven to 180°C and grease a baking tin.
  • Mix the mashed sweet potato with the eggs, honey and vanilla extract.
  • Add the almond flour, cocoa, baking powder and salt. Mix to a smooth batter.
  • Stir chopped dark chocolate into the batter if you want an extra chocolate kick.
  • Pour the batter into the baking tin and bake the brownies in the oven for 25-30 minutes. Let cool completely before slicing.
