Roast chicken with honey and ginger


This roast chicken with a glossy honey-ginger glaze is a perfect balance of sweet, spicy and savoury. A delicious dish for a weekday meal or a special dinner.

Ingredients
  • 4 chicken drumsticks
  • 2 tbsp honey
  • 2 tbsp fresh ginger, grated
  • 2 cloves of garlic, finely chopped
  • 1 lemon (juice)
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste
Instructions
  • Preheat the oven to 200°C.In a bowl, mix the honey, grated ginger, garlic, lemon juice, soy sauce and olive oil.
  • Rub the chicken legs with this mixture and place them in a baking dish.
  • Roast the chicken in the oven for 35-40 minutes, until golden brown and cooked through. Baste the chicken halfway through with the remaining glaze for extra flavour.
  • Serve the chicken with fresh vegetables and rice for a complete meal.

Fried salmon with ginger and lime


These quick-fried salmon fillets are full of flavour thanks to the combination of ginger, garlic and a dash of lime. This dish is light, fresh and perfect for a healthy meal.

Ingredients
  • 4 salmon fillets
  • 1 tbsp fresh ginger, grated
  • 2 cloves of garlic, finely chopped
  • 1 lime (juice and rind)
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Fresh coriander for garnish
Instructions
  • In a bowl, mix the ginger, garlic, lime juice, lime zest, soy sauce, olive oil and honey.
  • Rub the salmon fillets with this mixture and let them marinate for 10 minutes.
  • Heat a frying pan over medium-high heat and fry the salmon fillets for 3-4 minutes on each side, depending on thickness, until cooked and lightly caramelised.
  • Garnish with fresh coriander and serve with steamed vegetables or quinoa.

Ginger beef stir-fry


This quick and spicy stir-fry combines tender slices of beef with the warming flavour of ginger and crunchy vegetables. Ideal for a quick weekday meal.

Ingredients
  • 300 g steak, thinly sliced
  • 2 tbsp fresh ginger, grated
  • 2 cloves of garlic, finely chopped
  • 1 red pepper, in strips
  • 200 g broccoli, in florets
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp vegetable oil
Instructions
  • Heat the vegetable oil in a wok or large frying pan and briefly fry the steak slices over high heat, until browned. Remove from the pan and set aside.
  • Add the ginger and garlic to the same pan and stir-fry briefly, until fragrant.
  • Add the pepper and broccoli and cook for 5-6 minutes, until the vegetables are crisp.
  • Mix the soy sauce, oyster sauce, sesame oil and rice vinegar in a bowl and pour over the vegetables.
  • Return the beef to the pan and stir well. Serve immediately with steamed rice.

Roasted pork tenderloin with ginger-miso glaze


Pork tenderloin is a lean and juicy piece of meat, and combined with a ginger-miso glaze, it gets a delicious umami flavour with a spicy twist.

Ingredients
  • 2 pork tenderloins
  • 2 tbsp white miso paste
  • 1 tbsp fresh ginger, grated
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp olive oil
  • 1 clove of garlic, finely chopped
Instructions
  • Preheat the oven to 180°C. In a bowl, mix the miso paste, ginger, honey, soy sauce, rice vinegar, olive oil and garlic.
  • Rub the pork tenderloins with the glaze and place them in a baking dish.
  • Roast the pork tenderloins in the oven for 20-25 minutes, or until cooked through, depending on thickness.
  • Let the meat rest for 5 minutes before cutting and serve with roasted vegetables or a fresh salad.

Curry with ginger, coconut & scampi


A delicious, creamy curry with coconut milk and a tangy kick of fresh ginger. Filled with juicy prawns and plenty of vegetables, this curry is perfect for a tasty meal.

Ingredients
  • 400 g scampi, peeled and cleaned
  • 1 tbsp fresh ginger, grated
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 400 ml coconut milk
  • 1 tbsp red curry paste
  • 1 red pepper, in strips
  • 1 courgette, sliced
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • Fresh coriander for garnish
  • 2 tbsp vegetable oil
Instructions
  • Heat the oil in a large pan and fry the onion, garlic and ginger until soft.
  • Add the curry paste and fry for 1 minute to release the flavours.
  • Add the coconut milk, fish sauce and lime juice and bring to the boil.
  • Add the pepper and courgette to the pan and simmer gently for 5-7 minutes.
  • Add the prawns and cook for 3-4 minutes. Garnish with fresh coriander and serve the curry with steamed rice.
